6 cups water
2 bay leaves
Spring of thyme
2 pounds of chopped spinach.

First you saute the garlic for about 2 minutes in your choice of virgin oil. Continue to sauté while adding the onion, celery, leeks, and carrots. Cook until onions are done. You’ll know when the onions are cooked because they turn translucent. Then pour in the water and add bay leaves and thyme. Once everything has come to a boil then simmer for an hour. Remove from fire and set to cool for about an hour. After mixture has cooled you remove the bay leaves and thyme.

Next, you puree the vegetables and the cooled broth in a blender. Pour this mixture back into the pot and add spinach. Then cook over medium heat until the spinach wilts. Then you remove it at once so that you don’t overcook the spinach. Overcooking vegetables diminishes the vitamins and minerals in them. To have adequate amounts of vitamins and minerals in our body we should eat a variety of fruits and vegetables every day. Different kinds of fruits and vegetables have a different vitamin and mineral content, and so as not to miss out on several important nutrients we should more fruits and vegetables.

The holidays are upon us. Thanksgiving and Christmas are the two major holidays each year and there is so much food consumed during these two days. People travel long distances to be with their families during the holidays. A big part of the holidays revolves around food. Many people look forward to the food as much as they look forward to spending time with family. Thanksgiving means turkey, stuffing, potatoes and many other side dishes along with a host of desserts. Unfortunately holiday food also means holiday calories and pounds. People gain more weight during the holidays than any other time of year. It’s no wonder that people choose the start of the New Year as their time to improve their weight, which is after the holidays.

One way to get a handle on all the food that is being passed around during this time of year is to modify some of your favorite recipes. By simply finding a good diet recipe that is your staple at office and church potlucks during the holidays, you can help your calorie count out tremendously. Using a diet recipe doesn’t mean you have to sacrifice all the flavor and pizzazz you’re used to. Atkins Diet Recipes: Low Carb Chicken Alfredo

In this video, I demonstrate that good Italian is indeed possible on Atkins or a low carb diet. The unique ingredient in this Low Carb Chicken Broccoli Alfredo is the cream cheese in the sauce. As I mentioned in the video, there are lots of different options for to place the sauce on: — Spaghetti Squash (demonstrated in the video) — Dreamfield Pasta www.amazon.com — or one of my favorite, Riced Cauliflower. INGREDIENTS (Nutrition) * 1/2 cup butter * 1 (8 ounce) package cream cheese (low fat acceptable) * 1 teaspoons garlic powder * 1 clove garlic * 1 cup heavy cream * 1/2 cup water * 1/2 cup grated Parmesan Cheese * 3 ounces shredded Parmesan cheese * 1/8 teaspoon ground black pepper DIRECTIONS 1. Quarter the Spaghetti Squash, and place in pot to cook for 20 minutes. 2. Fry chicken breast in olive oil, season with salt, pepper, and Italian seasoning 3. Melt butter in a medium, non-stick saucepan over medium heat. Add cream cheese and garlic powder, stirring with wire whisk until smooth. Add water. Add cream, a little at a time, whisking to smooth out lumps. Stir in Parmesan and pepper. Remove from heat when sauce reaches desired consistency. Sauce will thicken rapidly, thin with additional cream if cooked too long. 4. Cook Broccoli. 5. Cut up chicken breasts and combine with broccoli and alfredo sauce. Serves 8+ people.
