My First Barbeque Chicken Cooking Lesson!

Everyone knows what they were doing when Elvis died. I remember just as vividly where I was and what was happening around me when I had my first barbeque chicken lesson. A cookout under the stars had been planned but that idea vanished with the first few drops of rain.

Mother Nature was trying her best to drown all of us in a monsoon-like downpour. She seemed determined to ruin our annual Chicken Night cookout. I was a member of our church’s Royal Ambassadors, a kind of boys’ club. Every year we had a cookout at the state park just outside of town.

Our outdoor cookout appeared to be doomed by the rain. We dashed inside to what could arguably be called a pavilion with a tin roof.  The rain on the metal top of the shelter was deafening.  It sounded like applause from 20,000 crazed Barry Manilow fans! No one could keep a fire going outside. We would have to adapt to the situation!

A giant stone fireplace commanded attention from one end of our pole barn shelter. Dry wood was stacked neatly to the side. There were no metal grates in the firebox on which to lay the chickens. The ones on the outdoor stone grills were encased in cement and couldn’t be moved.  Starting a fire in the rain was out of the question.

Our counselor, Mr. Smith had an idea. To us kids it seemed ridiculous but he seemed to know what he was doing. Instead of cutting up the chickens so we could cook them on the grill, he decided to leave them whole. He then ordered us to go out and find hickory leaves. He pointed out several of the large hardwood trees for those of us who didn’t know one tree from another.

While Mr. Smith and the other male counselor were starting a fire in the fireplace at the end of the shelter, we boys were scurrying through the rain trying to find hickory leaves. When each of us had both hands full we dashed back into the pavilion, soaking wet.

When the fire was roaring and we were drying off, Mr. Smith pulled out a small notebook that held his very own barbeque sauce recipe. Out of mayonnaise, catsup, mustard, salt and pepper, he was going to make the most wonderful tasting sauce I had ever put in my mouth.

This was before the grocery store shelves were filled with dozens of prepared sauces. Back then if you wanted something with which to baste the chicken, you had to make it yourself.

Next, he lathered up each of the six whole chickens with the mixture and wrapped them in the hickory leaves. But, the birds needed one additional condiment; mud. He grabbed the bucket that had housed our chickens and walked outside into the rain.

Scooping up mud from outside the pavilion, Mr. Smith filled the bucket and hurried back to the pole building. Now my part of the process was about to begin. After each of us registered our disgust at the mud, we got down to the business of applying it to each chicken.

Each of us boys had a hand in coating the leaf covered chickens in several layers of gooey, sticky black mud. Next, he scooped out hollows beneath the burning logs and carefully placed each bird in the fiery embers.

I don’t recall how long they stayed in the fire, but I do remember the aroma of baked chicken drifting on the clouds of wood smoke coming out of the chimney of the fireplace. It seemed like an eternity before Mr. Smith raked the six chickens out of the coals.

When he cracked open the hardened mud shell, steam erupted from between the hickory leaves and the bird just fell apart. Until this day, I have never eaten chicken any better than on that rainy night in North Alabama.

Vegetarian Cooking Is Terrific

Some people seem to think that vegetarian cookery is not nutritious but it plainly isn’t true. You never know how good vegetarian cooking is until you have tried it. Luckily, vegetarian diets have not been lost in the passage of time, and are available to all who feel like trying them.

If you wish to adjust your diet in the most beneficial way try vegetarian cooking. There are a massive amount of recipes in vegetarian cookery that make it difficult to decide which are the most suitable for you. Fashions come and go, but vegetarian recipes are not new and have seldom been more popular.

Modern day chefs don’t always concentrate their ideas on what is best for you to eat! An unreasonable amount of the suggestions of fashionable cooks and chefs seems more aimed at obesity than healthy eating. It often looks as if vegetarian cooking is outlawed by some celebrated chefs, which is a pity.

Vegetarian cookery really has so much to offer. Meat eating has been related to alarming stories about various illnesses. A number of terrible diseases have emanated from controversial and dubious farming methods. It now appears to be incredible to realize that vegetarian cows were fed food manufactured in part from dead cows. The dilemma is that it is not guaranteed that anything of the kind could never happen again.
Antibiotics are regularly administered to farm animals to prevent them contracting diseases that emanate from deplorable circumstances. Vegetarian cookery is one of the surest ways to excuse yourself from the often cruel treatment of animals. So, more vegetarians equals less cruelty to animals, and a healthier existence.

There is nothing wrong with vegetarian cooking, except for not doing it! It’s not a race, and you can take some time prior to committing to vegetarianism altogether. It is amazing what you can accomplish if you really try. It is never too late to begin something new, but vegetarianism isn’t new, it’s just so healthy!

Vegetarian cooking is so amazing that no-one ought to need convincing of its virtues. Vegetarian cookery offers the means of becoming healthy, and many who use it, now understand what they were missing previously.

Any gourmet cooking shows on tv these days?

I am so sick of the Foodnetwork the shows have gotten so hokey and not very informative in terms of gourmet cooking/food. I want to see shows on truffles and their use NOT a show about who invented the Twinkie!

Semi Ho made and Rachael Ray are just too cutesy for me. I want some shows on the real ins and outs of gourmet cooking!

Also, if anyone knows of any shows on wine that would be good too.

Ovo Lacto Vegetarian Cooking – The Healthy New Substitute On Your Menu

Dropping meat in your menu ingredients often times alter the taste even as what would normally a mouth-watering recipe turns out to be “just another dish on your buffet table”.

Amid an age when people tent to be health conscious, the idea of replacing meat as an ingredient in a recipe has been a growing practice among people who may want to adopt into what is popularly known as healthy living — less alcohol, drop smoking, regular exercise, dropping high-cholesterol foods and more vegetable on the menu.

Another type of this form is the Silken Tofu which could be as sumptuous as it could be when mixed with creamy sauces, desserts, marinades, and dressings. It is however a must that water is drained by way of putting pressure on it for about 15-20 minutes.

Tempeh, which comes from whole fermented soybeans, is another ideal meat substitute. Simply braise it in a flavored liquid before cooking it. Cooking of Tempeh usually takes an hour.

Seitan or wheat gluten for its part would best replace chicken meat products, while beans are at good alternatives for protein-conscious people who may want their ovo lacto vegetarian recipes in the preparation of soups, salads, stews and rice dishes.

But how does an individual create an ovo lacto vegetarian cooking pantry? Here are some tips and suggestions.

NON-PERISHABLE DRY GOODS

• Beans, canned

• Black beans

• Black-eyed peas

• Chickpeas (garbanzos)

• Great northern beans (cannellini)

• Pink beans

• Pinto beans

• Red or kidney beans

Grains:

• Barley

• Bulgur

• Couscous

• Rice (long-grain brown, basmati, arborio, quick-cooking, etc.)

• Quinoa

• Wild rice

• Dark sesame oil

• Extra-virgin olive oil

• Diced, in 14- to 16-ounce cans

• Crushed or pureed, in 14, 16, and 28-ounce cans

Vinegars:

• Balsamic (dark and/or white)

• Red wine or white wine vinegar

• Rice vinegar (for Asian-style cooking)

PREPARED CONDIMENTS, SAUCES, AND SUCH

• Barbecue sauce (great for broiling or stir-frying tofu, tempeh, or seitan)

• Pasta (marinara) sauce

• Pizza sauce

• Salad dressings (choose natural, low-fat varieties of your favorites)

• Salsa, tomato-based, mild to hot as you prefer

• Salsa, tomatillo

• Thai peanut sauce

• Stir-fry sauce

PANTRY VEGETABLES

• Garlic

• Onions (yellow, red, or both)

• Potatoes, white (red-skinned are an excellent all-purpose potato)

• Potatoes, sweet (for fall and winter)

REFRIGERATOR STAPLES

• Butter or margarine (both to be used quite sparingly; look for a brand that is free of hydrogenated oils and trans-fatty acids)

• Cheeses, shredded (low-fat if preferred, or soy cheese)

• Parmesan cheese, grated fresh (or if you prefer, try Parmesan-style soy cheese)

• Ketchup

• Lemons

• Mayonnaise (preferably commercially prepared tofu mayonnaise)

• Milk, low-fat, or soy milk

• Mustard, prepared

• Tofu

• Yogurts, plain and flavored
